GRAPES: Cabernet sauvignon Sauvignon, Merlot, Nero d'Avola 
PHYSICAL AND ORGANOLEPTIC QUALITIES :Strong ruby red colour. Rich, deep and fruity bouquet (cherry, raspberry). Full, persistent and harmonious flavour. Marked presence of tannins. 
SERVING TEMPERATURE: 18°C. 
SOURCE: Vineyards located at F° 142 in the Monreale - Palermo region (Loc. Virzì.) 
EXPOSURE : North - West 
ALTITUDE :250 metres above sea level 
SOIL TIPE : Sandy - clay 
GROWING METHOD: Hedge curtain 
VINEYARD DENSITY: 2500 plants / ha 
AGE OF THE VINES: 1990 
HARVEST TIME: Mid - September 
YIELD :50 hl / ha 
WINE - MAKING PROCESS: Maceration for 10 days, fermentation temperature 25°-28°C., stirring every 3 hours for the first 3 days, then twice a day. 
AGEING: After malolactic fermentation, 10 months in steel tank, part in barriques, and min. 6 months in bottle
SERVING SUGGESTIONS: roast or grilled meat, game, cheeses.
