Ficu Girgentana goat's vegetable cheese in fig leaf
Ficu is a goat's cheese obtained from the rare milk of the Girgentana goat, an endangered native Sicilian goat breed recognized as a Slow Food Presidium. The characteristic of this goat cheese is that it is produced with vegetable rennet. In fact, pasteurized goat's milk is coagulated with the latex of fig twigs. The cheese is then wrapped in fig leaf and its maturation lasts 2-4 weeks. The result is a soft and creamy cheese, with a particular herbaceous and acidic taste, delicious to spread on a slice of bread. Nutritionally rich and digestible, it is one of the few vegetable cheeses suitable for vegetarians and for those who are intolerant to bovine milk.
