The percentage of dark chocolate ranges from a minimum of 70% cocoa up to 80% in purity to enhance the tropical aromas of Sao Tome cocoa and benefit from the healthy properties of an authentic, good and genuine chocolate made without adding cocoa butter and emulsifiers or lecithins.
Furthermore, if we also combine chocolate with naturally dried Italian organic chilli, without adding flavorings, the result is a Modica chocolate bar with a spicy and persistent flavor with fruity notes, apricot and red fruits typical of Sao Tome cocoa, and caramelized typical of the cane sugar of the Manduvirà.
