Typical Sicilian product from natural agriculture, cicerchia is a protein-rich legume, less known than lentils, chickpeas and beans but no less good for this. Precisely for this reason cicerchia is an ingredient used to prepare gourmet dishes.
Cicerchia La Riserva del Re - Typical Sicilian product

A Sicilian product, Cicerchia La Riserva del Re is obtained from natural agriculture which is based on respect for nature and provides for precise rules: no to plowing the fields, no to pruning the plants, no to the use of herbicides, fertilizers or chemical treatments. The cicerchia is widespread mainly in the hills of Corleone, Piana degli Albanesi and San Giuseppe Jato. The seed of the cicerchia is small and angular. The delicate and unique flavour, a cross between that of dried peas and broad beans, is characterized by sweet notes and earthy and herbaceous hints.
Pairings: Excellent with soups, in combination with lupins, lentils or barley, or with traditional dishes and pork chops. Try it with fish dishes such as crustaceans and molluscs. Moderate consumption is recommended.
Storage: in a cool, dry place away from sunlight.
Tip: leave to soak in salted, warm water for 24 hours. Place in a pot with clean unsalted boiling water and cook for about 2 hours.
