Very fresh anchovies caught in the Cantabrian Sea and processed near the fishing site by the Sicilian company Balistreri, a renowned fish canning company specializing in the preservation of anchovies. Balistreri's Vaticano anchovies have an extraordinary pink color thanks to the immediate processing of the catch. Controlled fishing: Marca Vaticano anchovies are caught in the icy waters of the Cantabrian Sea (FAO area 27), in the North Eastern Atlantic Ocean with purse seines from April to July
Processing: careful and manual. As soon as they are caught, the anchovies are left to mature in salt for a year and a half. This technique ensures that the anchovies have an unmistakable and inimitable taste thanks to the right balance between saltiness and sweetness
Properties: large fillets; pink color of the fillets typical of freshly caught processed fish; meaty pulp, thicker and tastier due to the greater quantity of fat

Use: Vatican anchovies in oil are very versatile in the kitchen. In Sicily, anchovies are one of the main ingredients for making tasty condiments or for giving that extra flavor to simple dishes such as spaghetti aglio e olio. Excellent to enjoy on a bruschetta of warm and crunchy bread with a drizzle of extra virgin olive oil or to add to the crepe dough
