PROCESSING of Garum:

- Selection and preparation of anchovies: For this precious liquid, which has its origins in the times of the ancient Romans, very fresh anchovies are chosen, small in size and with firm flesh. After being cleaned and deprived of their heads and entrails, they are arranged in alternating layers with sea salt in large containers.

- Fermentation: The container is hermetically sealed and left to ferment for a period that can vary from a few weeks to several months. During this process, the proteins of the anchovies break down thanks to the action of bacteria and enzymes, giving rise to a dense and dark liquid.

- Maturation: The liquid obtained is left to mature for a further period, during which the flavor is refined and the characteristic aroma develops.

- Filtering: The liquid is filtered to eliminate any solid residues and obtain the ready-to-use garum.
