Fine and meaty fillets of Spanish Cantabrian anchovies processed freshly caught and in an artisanal way by the Sicilian company Balistreri, a renowned fish canning company that deals with the production and processing of salted and pickled fish. What makes this fish preserve even better is the strictly manual processing of the anchovies in the immediate vicinity of the same place where the anchovies were caught.
Cantabrian Anchovies, despite being Spanish, are linked to our Sicilian tradition also because it was a Sicilian from Trapani, Giovanni Vella Scatagliota, who discovered and appreciated their extraordinary quality. Before then, in fact, the caught anchovies were used by Spanish fishermen as bait for more valuable fish or were released into the sea.

Controlled fishing: Marca Vaticano anchovies are fished in the icy waters of the Cantabrian Sea (FAO area 27), in the North Eastern Atlantic Ocean with purse seines from April to July
Processing: careful and manual. Freshly caught, the anchovies are matured in salt for a year and a half. This technique ensures that the anchovies have an unmistakable and inimitable taste thanks to the right balance between flavor and sweetness
