Fruits: Feminello di Siracusa IGP lemons, a particularly sweet and juicy variety
Harvest: manual, within the first ten days of March
Method of preparation: as soon as they are picked, the lemons are peeled by hand and cooked at very low temperatures and vacuum-packed to preserve all their properties. Even the peel, left in cold water for a couple of days, is added to the preparation to give more flavor without the use of pectin
Color: green-golden. For a natural process it can darken but this does not affect the goodness of the product
Bouquet: pungent but at the same time fruity
Taste: sweet but balanced with a sour note
Consistency: pulpy, melts in the mouth and reveals all the juiciness of lemons
