Fruit: best varieties of PGI blood orange from Sicily such as Moro, tarocco and Sanguinello, or the precious and ancient Belladonna
Harvest: manual, within the first ten days of March
Method of preparation: as soon as it is picked, the fruit is peeled by hand and cooked at very low temperatures and vacuum-packed to preserve all its properties. The peel, left in cold water for a couple of days, is also added to the preparation to give it more flavor
Color: deep red
Bouquet: citrus with a perfect balance between sweet and pungent
Taste: enveloping with its natural sugary notes in contrast with the sporadic peaks of bitterness
