Manufacturing Process
Ditalini Russello pasta is an organic pasta produced by hand. Its excellent quality is due to careful processing. In fact, this pasta is produced from stone-ground flour, bronze-drawn and slowly dried for 48 hours at very low temperatures. Thanks to the slow drying, Russello pasta maintains all its nutritional and organoleptic characteristics.
Taste and Texture
Russello Ditalini have a fragrant and aromatic flavor, with notes of dried fruit and a light sweet aftertaste, typical of Sicilian durum wheat. Thanks to the bronze drawing, this pasta has a rough and porous texture, ideal for collecting and retaining sauces.
