Tumminia, or Timilia, is a durum wheat that has its roots in the thousand-year history of the island. A strong and resistant grain, capable of thriving in arid and sunny lands, rich in nutrients and with a characteristic dark color. Timilia flour, after stone milling, has a brownish/greyish color, different from the very white flours on the market and the food products derived from it have a characteristic dark color.
