Bukkuram Sole d'Agosto Passito of Pantelleria DOC 2022 Marco De Bartoli

Bukkuram Sole d'Agosto is the Passito di Pantelleria obtained from pure Zibibbo grapes from the Bukkuram vineyard in Pantelleria. Younger and less structured than the traditional Bukkuram, Sole d'Agosto is a passito with a Mediterranean character and extraordinary freshness produced according to the traditional recipe of Pantelleria. In fact, for years Marco De Bartoli tried to understand how to create this "nectar of the gods". The sun is fundamental for the production of this passito: the grapes dried in the sun in the month of August release the aromas and scents of the island which describe a territory with endless charm.

Harvest: manual. The harvest of the grapes to be dried takes place in the second week of August, while the grapes to be sent for winemaking in the first week of September

Winemaking: the grapes harvested in August are dried in the sun for at least two weeks in special drying racks, delimited by large lava stone walls. With the grapes that ripen on the vine until September, the production of the wine begins which, after fermentation with indigenous yeasts, will be left to macerate for about three months with the raisins, previously de-grasped by hand, which releases sugars, color and aromas

Refinement: after a short passage in barrels of at least 6 months, followed by refinement in steel tanks before being bottled

Analytical data of the wine: Reducing sugars: 148 g/l; Acidity: 5.21 g/l; Total SO2: 53 mg/l

Alcohol content: 14% vol

Color: golden with amber reflections

Nose: bouquet with spicy notes of ginger and citrus hints of bergamot with salty returns

Palate: elegant and refreshing. The finish is long with floral notes

Pairings: sweet wine to pair with seasonal fruits, cream desserts, dry pastries
