Martingana Passito di Pantelleria Salvatore Murana

Grapes: 100% Muscat of Alexandria
Vinification: the vineyards in the Martingana area, on the south coast of Pantelleria, due to their exposure and age, produce a limited number of bunches that are harvested towards the end of August. The grapes, once selected, are left to dry in the sun on "stinnitura", for twenty-thirty days and turned several times, patiently, by hand. The grapes are then crushed and the must, rich in sugars, is left to ferment at a temperature between 25 ° and 28 ° together with grape must that has not undergone withering.
Aging: in 2nd passage barriques lasts 24 months.
Color: burnt topaz with orange edge.
Nose: with an intoxicating scent, it is initially ethereal, then opens towards orange blossom honey, dates, dried figs, apricot jam, sweet spices such as cinnamon and nutmeg.
Palate: sweet, enveloping, perfectly balanced; very long in the final taste.
Pairings: dry pastries, chocolate, gianduia, or as a great conversation wine.
