Passo Nero is a Rosso Passito produced naturally by Arianna Occhipinti. Only 100% Nero d'Avola grapes left to dry on the vine as per Vittoria tradition. Fruity with spicy chocolate notes, Passo Nero is a bold wine, sweet but not excessively, with a tannic finish. An infinitely drinkable Passito, extremely enveloping and soft. Its mineral notes and incredible freshness make Passo Nero an unmissable dessert wine at the end of dinner.

Vinification: after the harvest, the grapes are dried for approximately 15 days. This is followed by crushing and destemming of the grapes, maceration on the skins and spontaneous fermentation with its own yeasts in 85 hl concrete vats for 7 days with daily pumping over and punching down.
Aging: in 750 l tonneaus for 16 months

Nose: fruity bouquet with very lively and fresh notes of red fruit, combined with hints of graphite, cocoa and anise
Palate: rich, enveloping and juicy, with a not too high residual sugar which balances well with the original acidity typical of nero d'avola. The finish is tannic with distilled traits and incredibly fresh
Pairings: ideal after dinner, Passo Nero Passito is a sweet but never cloying wine. It goes well with dark chocolate, dry pastries, chocolate flan with a soft centre. It surprises on a seared duck breast in a cherry sauce
