White Terre Tardive Milazzo

Terre Tardive of Milazzo is a Sicilian sweet wine born from the signature blend of Chardonnay and Inzolia grapes undertaken in 1991 with the Maria Costanza Bianco. It is a sophisticated and elegant wine, the result of innovation, in terms of quality and cultivation techniques, and of experimentation with blends and vinification methods. It is in fact the result of a late harvest that enriches it in flavor and sweetness.

Terre Tardive is a Sicilian sweet wine born from the signature blend of Chardonnay and Inzolia grapes undertaken in 1991 with the White Maria Costanza. It is a sophisticated and elegant wine, the result of innovation, in terms of quality and cultivation techniques, and of experimentation with blends and vinification methods. It is in fact the result of a late harvest thanks to which the grapes, left on the shoots beyond their ripeness, wither, enriching themselves with sugars. This gives more intense sweetness and flavor.

Soil type: soil with a high clayey component, strongly calcareous

Harvest: Manual in 14 kg crates in September

Vinification: Delicate shelling of the Chardonnay, cold maceration for 24 hours. Soft pressing, fermentation blocked with the cold in order to preserve the sugar component. Inzolia: delicate de-stemming, soft pressing. Fermentation blocked with the cold in order to preserve the sugar component and avoid a high alcohol content.

Aging: Refinement in steel of the Chardonnay. For Inzolia, partial aging (50%) in first passage oak barrels for about six months, the remaining part in steel. Reassembly, bottling and further refinement in the bottle.

Alcoholic content: 14% Vol

Color: straw yellow with light amber reflections

Nose: broad, rich with evident tropical notes, such as ripe pineapple, papaya, mango, and candied orange. The notes of hay, peppermint and nettle are well balanced

Palate: structured, round and fresh. Persistent and fragrant, it is supported by a pleasant flavor

Food & Wine: medium-aged cheeses, foie gras, blue cheeses, truffles, dishes based on feathered game (quail, duck), scallops.
