  • brining the meat together with the other ingredients for no less than 20 days
  • wrapping in elastic food netting
  • drying (in a drying room at a temperature of 26° C and a humidity percentage of 65% for approximately 12 hours)
  • maturation (in a maturing room at a temperature of approximately 04° C and a humidity percentage of 75% for approximately 365 days)
