The Nero Siciliano, also called black swine of Nebrodi, is an autochthonous Sicilian breed of very ancient origin. This pig is reared under extensive or semi-extensive management mainly in the Nebrodi mountains of the Messina province in the island of Sicily.

This pig has a homogeneous black colour and medium-small in size. The pigs show a long snout and long limbs; very hard clogs allow them to move easily on different kinds of ground
Appearance: cylindrical horseshoe in shape - the dried sausage is bent by hand with the ends tied with natural twine.
Consistency: Tender, compact.
Appearance of cut: Coarse-grained, dark red with white lard inside.
Weight: Varies from 0.4 to 0.5 kg
Smell: Intense aroma characteristic.
Taste: Strong, aromatic.

si potrebbe migliorare solo per 1 mio gusto personale: aggiungere un po' piu' di finocchietto.La qualita' e' strepitosa,lo si percepisce gia' dal budello.il taglio a coltello la rende unica e quel grasso particolare...una bomba al palato!!!
