History: It is a highly sought after and appreciated edible mushroom. This species has been known since ancient times.
The cap is Fleshy, convex, then depressed in the centre, convoluted edge, slightly velvety; whitish, then brownish; 3-10cm in diameter. the color changes according to the climate, lighter when exposed to the sun.
Preparation: We clean the mushrooms by eliminating all the soil; we put them in water acidulated with lemon juice and wash them carefully. Bring the vinegar and wine to the boil with the salt, add the mushrooms and boil them for about 2 minutes. We drain them, and let them dry on a tea towel, dabbing them gently. Finally we arrange them in jars with natural flavourings.
