Pacenzia is a mix of elegance, uniqueness, diversity and typicality. Patience (pacènzia in fact) gives its name to this wine, a quality that distinguishes being Sicilian in knowing how to wait for the sun and the passage of time to shape the best grapes of a late harvest.

It belongs to the family of the ''Terra Nera'', on the hills of the Trapani hinterland. Soil type rich in silty-clayey substances, compact and resistant to drought in the area. Perfect for growing both red and white grapes.

This wine is perfect to combine both with medium-aged cheeses and with dry pastries and fruit-based desserts.

How is this wine made and what are its characteristics?

The grapes that wither are cold macerated and subsequently fermented in thermoregulated tanks; this procedure gives the wine aromas and an unforgettable taste.

Varietal: Zibibbo

Denomination: Terre Siciliane IGP

Soil: clayey black earth 70-100 meters above sea level

Color: Intense golden yellow

Nose: Elegant hints of candied citrus fruits, honeyed, enveloping with marked notes of ripe fruit

Palate: Moderately sweet, soft and harmonious with excellent balance

Pairings: It adapts perfectly to both fruit-based desserts and blue or medium-aged cheeses

Vinification: The grapes undergo a natural drying process in the vineyard, with subsequent destemming and cold maceration and thermoregulated fermentation. This is followed by a natural arrest of the fermentation through the cold.
