After crushing the must is left to ferment in new French oak barrels. It ages on its lees and after approximately five months it is bottled for the necessary refining. 

Classification: White Wine - Sicily IGT.

Harvest period: August/September 
Fermentation: In new French durmast Allier barrels 
Max temperature: 18-20°C 
Refining: 4/5 months in new French durmast Allier barrels, 4/5 months in bottles 
Best with: Top quality savoury fish dishes and hard cheeses
