Bianca di Valguarnera by Duca di Salaparuta is a Sicilian white wine of great tradition obtained from Insolia grapes. Aged in oak barrels, it shows a complex and aromatic bouquet with hints of vanilla and dried fruit. A white wine for important occasions, also perfect as a meditation wine.

Produced with carefully selected Insolia grapes from the high hills of Salemi, this noble Sicilian white ferments in oak wood and evolves there until spring. The long aging in the bottle gives it refinement and good longevity.

Classification: Typical Geographical Indication Sicily (IGT). 

Grape variety: 100% Insolia. 

Production area: Central and western Sicily, town of Salemi. 

Altitude: More than 300 meters msl. 

Soil: Clayey-calcareous.

Climate: Mild winters with very dry springs and summers.  

Vineyard age: more than 20 years

Vineyard training system: Alberello

Vine density: over 5,000

Yield: low yield per plant (max 1.2 Kg.)

Harvest: By hand, at full maturity (end of September). 

Vinification: Soft pressing with membrane presses, static decanting of the musts and slow fermentation in choice oak barriques. 

Ageing: On the lees in barriques for at least eight months. 

Maturing: After bottling, 12 months in controlled temperature cellar in reclined bottles to develope its bouquet. 

Alcohol content: 13.5% vol

Colour: golden yellow with greenish highlights. 

Aroma: Complex and intense, rich in sensations typical of ripe fruit enhanced by scents of vanilla and dry fruit and nuts thanks to the evolution in wood barriques. 

Flavour: Marked character, well-bodied, harmoniously elegant and particularly persistent. 

Serving temperature: 14°C. 

Recommended glass: Transparent long-stemmed balloon glass. 

Pairings: Excellent with smoked salmon, tuna and swordfish, mushrooms, fish and shellfish, medium-aged cheeses. 

Storage: Reclined bottle in very cool (13° - 15° C.) room, not too moist, away from direct light. 

Life: More than 5 years if kept in cellars with suitable conditions.

1st year of production: Vintage year 1987.
