A straw-yellow wine with greenish highlights - this is the Calanica Insolia & Chardonnay shows in the glass. The nose gives off an elegant aroma with hints of lemon, apple and grapefruit. On the palate, then lively, well structured and, in turn, with intense lemon flavors.

PRODUCTION AREA: Western Sicily, between Salemi and Gibellina “Risignolo” estate
Grape: Insolia 60% - Chardonnay 40%
Classification: Geographical indication (IGT Sicilia)
1st year of production: 2008 harvest
Soil: Mixed composition, mostly siliceous-clay
Altimeter: Around 300 metres above sea level.
Vines: Vine grown on spurred cordon with 4.500 plants per hectare.
Climate: Mild and wet winters with very dry and windy springs and summers, with wide temperature variations.
Harvest: By hand, early morning at full ripeness, in the first fortnight of September for Insolia grape and second fortnight of August for Chardonnay.
Vinification: Very soft pressing of grapes and use of only floral must. Slow fermentation at 16 - 17° C. for about 15 days and then long contact with yeasts.
Maturation: In late november the two wines are mixed and left to rest at a controlled temperature until February in order to blend the specific characteristics.
Affinement: For at least one month in bottle at controlled temperature.
Color: straw yellow with greenish tints
Perfume: Intense and elegant, full of ripe fruit, apple, citron and grapefruit.
Flavor: Lively, yet full and structured, markedly fruity with clear, pesistent hint of lemon preserve.
Alcohol degrees: 12,5 % by vol.
Serving temperature: 10° - 12° C.
Recommended glass: Slim tulip with long stem, transparent glass.
Suggested accompaniments: Excellent apertif, ideal with shellfish, seafood and fish dishes in general.
Storage: In very cool places (13°-15°C) away from the light.
Age: A wine which should be drunk within two years.
