Chardonnay Cellaro is a Sicilian white wine obtained from Chardonnay grapes with an intense straw yellow color, a delicate, fruity aroma (apple and exotic fruits) with floral notes. With a fresh, full, fruity, harmonious taste, persistent in the mouth with a pleasant bitterish aftertaste reminiscent of almonds.
Production area: Sambuca di Sicilia (Agrigento)
Soil: Medium texture tending to clayey. Altitude 300-350m.
Type of planting: Counter-espalier pruned with spurred cordon
Plant density: 4,000 plants per hectare
Average yield per hectare: 80 quintals
Harvest: Between 10 and 20 August
Vinification: Destemming and soft pressing of the grapes. Fermentation at controlled temperature at 16-17° C with a period of rest on the lees after fermentation.
