Vinification: vinification in partial shelter from the air ("semi - reduction" vinification technique), natural decantation, fermentation at a controlled temperature (16°C) for 13 days in steel. 15% of the must matures in French oak barriques. Subsequently the two components are combined and end the maturation in steel. Filtration, stabilization and bottling follow

Bouquet: intense and fruity with notes of pineapple, tropical fruit and vanilla. Notes of acacia honey given by aging
Taste: harmonious and balanced, with a pleasant viscosity that balances the delicate acidity

Pairings: excellent with raw fish appetizers, first courses of pasta with vegetables, second courses of fish and white meats. Try it with a tasty cream such as Syracuse potato cream
