Traditional vinification by soft pressing and cold settling of the must. Thermo-controlled fermentation at 16 degrees for about one mo nth ; at the en d of fermentation, rapid cooling of the wine to trap the natural CO2 of fermentation and maintain a natural light perlage until bottling.
