Cometa Planeta
A great white wine from southern Italian grapes which can be compared with the most important white wines of the world; this was the initial intention. During the 1990′s this was the aim of our experiments with Fiano, a noble and ancient variety originating in Campania.

Vinification: the grapes are crushed and destemmed; the juice is clarified through settling cold overnight and then inoculated with selected pure yeast. The fermentation is carried out partially in oak barrels and partially instainless steel tanks;

Fermentation temperature: 15° C in steel tanks;
Bottling period: Second half of February;
Duration of fermentation: 20 days;
Alcohol content: 14,50% vol.;
Total acidity: 6,35
Ph: 3,48;
Ageing potential: to be drunk immediately or to keep for some years;
Soil tipe: GURRA: shallow soil, average limestone, with a good section of yellow and dark-grey clay; moderate fine texture, not much presence of stones;
