WHITE WIINE OF SICILY I . G . T. It is made with a careful selection of grapes of Carricante and Chardonnay, cultivated on the slopes on the eastern and northern side of Etna. 
Vinification: grapes are harvested with careful selection 
and placed in short cases to avoid crushing during transportation to the winery. The bunches intact, are softly pressed. Fermentation takes place at 20-23°C in casks. After fermentation 
the wine is left to mature on its yeasts in the same casks for at least one year. 
Refining: in bottle for 6-8 months minimum. 
Organoleptic characteristics: 
- Color: pale yellow. 
- Scent: intense, rich, full, fruity with scents of ripe apples, citrus, anise and bitter almond. 
- Taste: dry, harmonic, full-bodied, reasonably acidulous, with after taste of anise and almond. 
Alcoholic content: 12,5-13% by VOL. 
Serving temperature: 12-14°C, in glasses suitable for white bodied wines. 
Gastronomic accompaniment: optimal with fish or white meats.
