What are the characteristics of this white wine?

The particular conditions of the land and the microclimate of Etna considerably influence its sensory characteristics. The greater acidity of the caricante grapes is balanced by the union with the catarratto, at the same time bringing a remarkable sensorial complexity. The collection is done manually in boxes.

Grapes: Caricante 70%, Catarratto Bianco 30%

Vineyards: Tenuta San Michele and other vineyards authorized for DOC

Land: Alluvial

Average yields: 50-55 hl/ha

Breeding: Espalier with planting density of 4'500-5'000 plants/ha

Alcohol content: 12.0-12.5% vol.

Fixed acidity: 6 g/l

Residual sugars: <1 gr/l

Annual production: 60,000 bottles of 0.75 l

Colour: Straw yellow with light green notes
