Vinification: After being de-stemmed, the grapes are crushed and pressed with soft presses and only the very first fraction of must is recovered for fermentation. The must thus obtained is added with selected yeasts and placed for a long fermentation, about 25/30 days, at a temperature of about 12/15 ° C.
After fermentation, the wine, not deprived of the lightest lees, is left to refine in steel silos for 13/15 months at a temperature of about 14 ° C.
Alcoholic degree: 13% vol
Tasting notes: Straw yellow, with golden reflections. The nose has a pleasant finesse; it is expressed with hints of yellow fruits and notes of white flowers. On the palate it is full and rich, with balanced acidity and a harmonious finish.
Pairings: Excellent with fish-based dishes, it also goes well with shellfish and oysters.
