Passobianco is characterized by its consistency, precision and freshness, and will continue to evolve in the bottle over time. 2016 on Etna was an excellent year, with the harvest of whites in early September. Citrusy and fruity, with hints of pear and honey, high acidity and mineral base that comes from this special place where vines are grown.

Vineyard age: 15 years

Vineyard area: 5 hectares

Vineyard density: 12,300 vines/Ha

Vineyard altitude: 1,000 m asl

Yield per hectare: 48 Hl/Ha

Fertilization: None

Spraying: Clay, propolis, grapefruit seed extract, copper, sulphur

Vinification: Steel vats for 20 days at 23 degrees Celsius

Aging: 10 months in cement vats and large oak barrels, followed by an additional 6 months in bottle
