Pietra Nera is the symbolic wine of Marco De Bartoli's winemaking innovation in Pantelleria. PietraNera by De Bartoli is the first white wine from Zibibbo grapes vinified dry. Cultivated using the Alberello Pantesco method, a UNESCO heritage method, the Zibibbo grapes give an aromatic and mineral wine, intense and complex which is innovative compared to the traditional wines of Pantelleria.

Vinification: after a rigorous manual selection of the bunches, the grapes are destemmed and delicately pressed to start a cold maceration for approximately 24 hours. Following soft pressing, the must, at a low temperature, remains to decant for 48 hours
Fermentation: the clarified part undergoes fermentation with indigenous yeasts in steel tanks at a controlled temperature
Aging: 9 months in steel tanks
Analytical data of the wine: Acidity: 4.86; Residual sugars: < 1.0; pH: 3.47; Total SO2: 26 mg/l
Alcohol content: 12,5% vol.
Color: intense straw yellow
Nose: complex and aromatic bouquet with floral notes and citrus scents
Palate: fresh, aromatic with a pleasantly bitter finish
Pairings: excellent white wine to pair with shellfish, fish tartare, oysters, raw seafood
