VINIFICATION: Whole bunches are subjected to soft pressing in pneumatic presses with central lung under nitrogen, in the total absence of oxygen until bottling. This is achieved by saturating the tanks and carrying out the transfers in counter-pressure with nitrogen.
MATURATION: In steel for about 4 months. Final refinement in the bottle
ALCOHOL: 13% vol
COLOR: intense straw yellow with green reflections
NOSE: pleasant and variegated with evident notes of white fruit, ripe pear and white melon. The finish is complex with an aromatic vegetable spice reminiscent of lemon balm.
PALATE: important structure, enhanced by a good acidity that supports the gustatory persistence.
WINE PAIRING: Appetizers, fish, white meats. And, generally with delicate foods.
SERVICE TEMPERATURE: 10°C.
DURATION: Approximately two years, and more, if stored in rooms suitable for a maximum temperature of 12 ° C.
