WINE MAKING METHOD: Depending on the quality of the vine, the grapes are stripped off the stalks and, while still whole, lightly pressed in pneumatic presses with central bellows. The grape juice is fermented in thermostatically controlled, stainless steel wine vats.
REFINING: Bottling takes place before the spring following harvest. The wine is stored in the cellars for two months before sale.
COLOUR: Light straw-yellow with greenish hues.
THE BOUQUET: Hints of Mediterranean fruits and flowers, such as myrtle and eucalyptus; notes of citrus fruits and lime.
TASTE: Delicate, fine, with good acidity, tempered by a nice roundness. Background taste of Mediterranean fruits.
ALCOHOL CONTENT: 12% by volume.
BEST SAVOURED WITH: Hors d’oevres, fish, white meats and any delicately flavoured foods.
SERVE AT: 12° C
KEEPS: Around two years; more, if stored in suitable locations at no more than 12° C.
