Vineyards: “San Francesco” (8.10 Ha) and “Cozzo Ginestre” (4.25 Ha).
Age of vineyards: “San Francesco” 1985, “Cozzo Ginestre” 1999.
Training system: Guyot and spurred cord.
Vines per Ha: 4.000.
Yield per Ha: 4.5 t.
Soil: Medium mixture with a tendency to wards clayey texture.
Vineyard exposure: South, South-West.
Harvest period: First of September.
Must analytical data: Babo 22.3° - Tot. Ac 6.0 g/l - pH 3.70.
Fermentation: Traditional in red.
Maceration skin-contact during: 14 days.
Fermentation temperature: 26/28°C.
Malolactic fermentation: Totally developped.
Refinement: 12 months in french oak (Allier e Tronçais) 300 l tonneaux, 60% new, 40% second passage; 8 months in bottle.
Bottling: June 13th and 14th 2005.
Alcohol content: 14.50% Vol.
Appellation: Cabernet Sauvignon D.O.C. - Contea di Sclafani.
Colour: Ruby red of very good intensity with garnet reflections.
Bouquet: Wild berries, vanilla, black pepper, tobacco, cinnamon, mint, sage.
Taste: Rich of ripe and concentrate fruit, soft, elegant, balanced.
After taste: Tannin sweet and persistent, grapes.
