WINE MAKING METHOD: the grapes are stripped off the stalks and left to macerate for varying periods and at different temperatures, depending on the grape quality. The grape juice ferments in stainless steel, thermostatically controlled wine vats.
REFINING: the wine is bottled twenty months after harvesting and laid down in the winery at a controlled temperature for at least four months before sale.
COLOUR: ruby red with violet hues
BOUQUET: neat and intense. Interesting notes of liquorice and spices, which develop into really ripe notes of red fruit, such as some typical cherry varieties.
TASTE: very pleasant and well structured, with a nice roundness over a velvety tannic structure
ALCOHOL CONTENT: 12-12.5% by volume, depending on vintage
BEST SAVOURED WITH: grilled meats, roasts, fresh or slightly spicy cheeses
SERVING TEMPERATURE: around 16° C.
KEEPS: can be stored for over 6 years in bottles laid down where the temperature does not exceed 16° C
