From the beautiful countryside of Dorilli, between the sea and the Iblei mountains, the Cerasuolo di Vittoria of Cantine Planeta is born, a Sicilian red wine obtained from the native Nero d'Avola and Frappato varieties. The name of the only DOCG in Sicily derives from "Cerasa" which means cherry in Sicilian dialect. A Cerasuolo di Vittoria of ancient tradition but with a youthful character.

Grape variety: 60% Nero d'Avola - 40% Frappato

Vineyards: Dorilli, Mogli

Type of soil: the main feature of the soils in the Cerasuolo di Vittoria area is the sandy texture; the soils are mainly made up of loose red sands with an absent skeleton and medium depth; at about 90 cm there is a tuffaceous layer important for the water balance of the plant.

Altitude: 70-80 m a.s.l.

Yield per hectare: Nero d'Avola 65 quintals, Frappato 55 quintals

Training system:  espalier with spurred cordon pruning system for Nero d’Avola and Guyot pruning for Frappato

Plant density: 5,050 plants per hectare

Harvest period: 17-19 September

Vinification:the grapes are gathered by hand and machine and transported to the winery in small trolleys. Once at the cantina, they are pressed and destemmed, then sent to stainless steel vats of 114 and 170 hl. The grapes are stirred three times a day with very short pumping – between 10 and 25 minutes – according to the phase of fermentation, giving due care to skins and fruit. Fermentation lasts for 7-8 days, with the temperature in the first phases held around 14-15°C and then, when approaching its conclusion, refrigeration is suspended and the final degrees of alcohol are achieved with temperatures between 24-25°C. Once the fermentation has finished, the skins will have remained in contact with the wine for 13-15 days, and are then racked off. The malolactic fermentation occurs in the same vats

Nose: intriguing wine with a charge of extraordinary vital energy based on berries, strawberries, mulberry and pomegranate

Palate: an extremely gastronomic version of Cerasuolo that we like very much also for its fleshy and peppery notes. In the mouth the wine reflects the olfactory perceptions and so we happily find the black pepper that mixes with the carob and sweet cherries. Snappy palate with a very sapid and round finish with notes of mulberry

Pairings: perfect with a slice of lightly seared tuna, with sautéed mushrooms or feathered game. The combination with pizza is surprising

Aging potential: to be drunk immediately or to be kept up to 6-8 years

il cerasuolo di vittoria mantiene fede alla sua fama. Gusto profondo, fruttato e profumato si abbina a tutti i secondi di carne ed ai formaggi stagionati. Un vino corposo e ottimo da bere.
