VARIETIES: Nerello Mascalese and Nerello Cappuccio
PRODUCTION AREA: ETNA, north side in the municipality of Castiglione di Sicilia
PRUNING SYSTEM: Spurred cordon
YIELD PER HECTARE: 70 quintals.
HARVEST PERIOD: 2nd and 3rd decade of October
VINIFICATION SYSTEM: The grapes harvested manually in small boxes are quickly brought to the cellar and are subjected to a manual selection on a belt. Destemmed and not completely crushed, they are sent to cement tanks, where they macerate for about 10/12 days at a temperature of 22/25 ° C. After fermentation, the grapes remain to macerate for a few days after which they are drawn off and pressed with a traditional vertical press.
AGING: About 6 months in large wooden barrels and about 3 months in the bottle.
COLOR: Dull ruby ​​red with faint purple reflections, typical of the variety not very rich in color.
NOSE: There are evident hints of small red fruits, morello cherry, black cherry.
PALATE: It stands out for its typical balanced tannins and surprising fullness, flavor and length.
