Harvest: Hand-picking. Syrah third decade of August, Cabernet Franc early September
Production Technique: Traditional red vinification in small oak conical section 100 hl. without selected yeasts, enzymes and clarifying at controlled temperature by pumping, pressing and delestage max 32°C, for 15 days in maceration on the skins.
Ageing: 2 months in concrete tanks, then in French Allier oak barrels for 30 months then finally in bottle.
Alcoholic content: 14% vol
Matches: indicated for prestigious meat dishes and medium-aged cheeses.
