Rosso del Soprano Palari
His Rosso del Soprano, a blend based on a wine known in antiquity as Mamertino, comes from the native Nerello Mascalese, Nerello Cappuccio, and Nocera grapes.






Vinification: traditional in red, in stainless steel with thermal conditioning of the fermentation and maceration process.
Refinement and maturation: a part in small troncais barrels and a part in stainless steel for a period depending on the structural composition of the vintage. Rest in the bottle for no less than 8 months.
Organoleptic analysis:
- Color: intense ruby red
- Bouquet: long and penetrating, concentrated berries and jam
- Taste: Dry and enveloping taste with an aftertaste of ripe fruit
Service: in ballon glasses at 18°C. In summer preferable to 15°C
Pairings: roasted white and red meats, noble poultry, sauced fish dishes, grilled semi-mature cheeses.
Storage: from 3 to 8 years, even longer in particular vintages.
