Soil: medium calcareous mixture.
Plantation density: 4600 plants/hectare.
Training system: espalier.
Harvest date: second ten days of September.
Yield per hectare: 7000 Kg.
Climatic conditions: rainy in winter and spring, dry in summer.
VINIFICATION AND AGING
Fermentation containers: stainless steel vat.
Fermentation temperature: 24-26°C.
Duration of fermentation : 6-8 days.
Malolactic fermentation: stainless steel vat.
Refinement: tonnaux and large barrels.
Bottles produced: 2500.
Pairings:roasts, game and hard cheeses.
