Production area: Sambuca di Sicilia, province of Agrigento, and Acate, province of Ragusa. In Sambuca di Sicilia a more mature and structured wine is obtained, while in Acate a more delicate and fruity wine

Average planting density: 4,500 plants per hectare
Harvest period: first week of September
Vinification: after harvesting at perfect aromatic and polyphenolic ripeness, followed by de-stemming and alcoholic fermentation with the skins for 10 days at 25-26°C. The malolactic fermentation takes place with selected bacteria, then follows the maturation for 10 months in French oak barriques
Color: deep ruby red
Bouquet: rich and persuasive, spicy and balsamic notes of black pepper and thyme blend with those of fruits and woods
Taste: the tannic sensation is velvety and pleasant, a wine with a well balanced body
Alcoholic degree: 13.5%
Pairings: it goes well with savory cold cuts, grilled red meats, game, smoked cheeses and herbs. Try it with swordfish with rosemary
