VINIFICATION: the grapes are gently de-stemmed and after a 24 / 48h pre-fermentation cold maceration is fermented in vertical steel vats for about 3 weeks with daily pumping over in the air, in order to optimize the extraction of colors and aromas from the peels
MATURATION: about 12 months partly in oak barriques and partly in steel - final refinement in the bottle
ALCOHOL: 14.5% vol
COLOR: impenetrable red.
NOSE: sweet scents reminiscent of mulberry and black cherry. Sweet spices are reminiscent of licorice, incense and cocoa berry.
PALATE: it is structured with a vigorous but at the same time elegant and fragrant character, with excellent persistence.
PAIRING: accompanies first courses based on meat and vegetables, grilled meats, roasts, game, medium-aged cheeses
SERVING TEMPERATURE: about 17-18 °C
POTENTIAL AGING: over 8/10 years
