Type of soil: Capo Milazzo was born as an extension of the mountains in the north of Sicily, from the outcrop from the sea and subsequent transformations. It looks like a flat promontory bordered by steep escarpments that descend for almost 60 meters to the sea. The soils of alluvial origin are loose, dark, deep and with little skeleton, generally rich in silty fraction.

Harvest period: 18th September
Vinification: the grapes are harvested by hand in 14 kg crates and, as soon as they arrive in the cellar, they are passed to the sorting table for a selection, then crushed and destemmed. They ferment in steel tanks and remain on the skins for 14 days at 25°C with repeated pumping over until the end of the period. After being drawn off in a soft press, the wine thus obtained undergoes malolactic fermentation in steel.
Refinement: 12 months of refinement in 35 hl barrels

Color: bright and intense red with purple reflections.
Nose: explosive of Mediterranean scrub, blue fruit and jam.
Palate: dense and not excessive tannins, well integrated with the wood.
Pairing: home-made appetizers, first courses based on ragout, artichokes cooked in every way, lamb and grouper in casserole.
Aging potential: to be drunk immediately or to be aged up to 3 years
