Lamoremio by Benanti is a rosé sparkling wine made from Nerello Mascalese grapes, a native vine of the Etna area. The uniqueness of the terroir of the southern slope of Etna gives us this mineral, elegant Classic Method with a fine and persistent perlage. Excellent to drink throughout the meal.

Production area: southern slope of Mount Etna
Altitude: 700-750 m a.s.l.
Climate: mountain climate, humid, rainy and at times snowy in winter, with very high ventilation, luminosity and diurnal range
Soil: sandy, volcanic soils that are rich in minerals, with a sub-acid profile
Training system: spur pruned cordon system
Age of vines: between 10 to 20 years
Vine density: 6000-7000 vines/ha
Yield: 70-80 quintals/ha

Vinification: grapes are softly pressed without any de- stemming. Fermentation takes place in steel tanks at a controlled temperature of 16-18°C. The wine is left to mature on its lees until late spring, when it is bottled with selected yeasts to induce the second fermentation. The disgorgement and dosage occur after 24 months. The wine then rests for at least three months

Perlage: numerous, fine and persistent bubbles
Nose: intense, delicate, with hints of red fruit
Palate: dry, mineral with pleasant acidity, slightly tannic and with persistent red fruit flavors

Pairings: cold cuts, cured meats, fresh cheese, vegetables, white meats, seafood, marinated or cooked fish-based recipes and by the glass occasions
