How is this sparkling wine made and what are its characteristics?
The harvest with plastic boxes is manual, before complete maturation. The pressing is very delicate, carried out with automatic presses. Subsequently the decantation takes place in insulated tanks with cooling of the must. Fermentation takes place in stainless steel tanks at a controlled temperature for about 20 days, with subsequent aging in stainless steel tanks for 7/8 months. While the bottle-aging takes place on the lees for a variable period of 5/6 years.
