Brut Classic Method White Sparkling Wine Donnafugata

Donnafugata's Millesimato sparkling wine is a classic method Brut refermented in the bottle with surprising elegance. It is packaged in a beautiful cardboard box depicting the face of an elegant woman among the bubbles. The woman's light smile, which brings to mind the Mona Lisa or Lady with an Ermine by Leonardo Da Vinci, and the gold foil inserts in the perlage recall the finesse and liveliness of this sicilian sparkling wine.

Grape Variety: Chardonnay and Pinot Noir

Production Area: South-western Sicily, Tenuta di Contessa Entellina and surrounding areas

Altitude: 470-500 meters above sea level

Exposure: north-east

Soil: clayey soils with a sub-alkaline reaction (pH from 7.5 to 7.9), rich in potassium, magnesium, calcium, iron, manganese, zinc; total limestone from 20 to 35%

Climate: mild winters and dry, windy summers with strong temperature variations between day and night

Training system: counter-espalier

Pruning type: guyot

Density of plants per ha: 4,444 plants

Grape yield per ha: 75-85 q/ha

Harvest: in the first ten days of August. Grapes harvested manually in boxes and carefully selected

Vinification: arriving in the cellar, the grapes are selected again on the vibrating table before soft pressing

Fermentation: in steel at approximately 16-17°C. This is followed by refermentation in the bottle

Aging: after the draft, the Brut ages on the yeasts for at least 36 months

Analytical data of the wine: pH 3.13, total acidity 7.6 g/l, residual sugars 6.7 g/l

Alcohol content: 12% vol

Perlage: fine and persistent

Color: bright straw yellow

Nose: intense, fresh and fruity bouquet. On the nose it offers notes of green apple, citrus fruits such as lemon and cedar, hints of mint and green tea. There are also pleasant nuances of bread crust typical of aging on the yeasts

Palate: harmonious and savory brut with good structure and strong personality

Pairings: excellent sparkling wine as an aperitif combined with finger food such as cold cuts, bruschetta and tempura vegetables. It goes well with fish and shellfish first courses, seared scallops and fried fish

Glass: medium width, without flaring

Serving temperature: 6-8°C

Longevity: 8-10 years
