Donnafugata's Millesimato sparkling wine is a classic method Brut refermented in the bottle with surprising elegance. It is packaged in a beautiful cardboard box depicting the face of an elegant woman among the bubbles. The woman's light smile, which brings to mind the Mona Lisa or Lady with an Ermine by Leonardo Da Vinci, and the gold foil inserts in the perlage recall the finesse and liveliness of this sicilian sparkling wine.

Harvest: in the first ten days of August. Grapes harvested manually in boxes and carefully selected
Vinification: arriving in the cellar, the grapes are selected again on the vibrating table before soft pressing
Fermentation: in steel at approximately 16-17°C. This is followed by refermentation in the bottle
Aging: after the draft, the Brut ages on the yeasts for at least 36 months

Nose: intense, fresh and fruity bouquet. On the nose it offers notes of green apple, citrus fruits such as lemon and cedar, hints of mint and green tea. There are also pleasant nuances of bread crust typical of aging on the yeasts
Palate: harmonious and savory brut with good structure and strong personality
Pairings: excellent sparkling wine as an aperitif combined with finger food such as cold cuts, bruschetta and tempura vegetables. It goes well with fish and shellfish first courses, seared scallops and fried fish
