Vinification of the base wine: The grapes are cooled and subjected to a selection of the bunches. A soft direct pressing of the grapes (whole) follows and, after the spontaneous decantation of the must, fermentation is expected in steel tanks, to then continue in French oak barrels (20% of the grapes) at a controlled temperature in indirectly, with air conditioning of the environment. Fermentation is carried out by indigenous yeasts and with a minimum use of sulphites
Tirage: (August 2018) Addition of fresh must, always obtained from Grillo grapes of the following year, present in the same vineyard, and following the same method for the vinification of the base wine. The fresh must is added to the wine in proportional quantities such as to dilute the alcohol content and provide the quantity of sugar (natural) necessary for the second fermentation. The contribution of must does not exceed 15%, so the wine is fully included in the category of vintage
Aging: 50% of the base wine ages 12 months in steel, while the remaining 50% ages in French oak containers, on its own yeasts. After the tirage, at least 18 months in the bottle, always on its lees
Disgorgement: starting from November 2019
Pairing: to be paired with crustacean-based appetizers or, throughout the meal, with both traditional Sicilian dishes or fish tartare, especially Mediterranean red tuna seasoned with black pepper, salt from the Trapani salt pans and fresh thyme. Serve at 8 ° C.
