Obtained from the sparkling process of Grillo grapes, Terzavia is an innovative Sicilian Classic Method: during the tirage phase, the right amount of fresh must of Grillo grapes from the following year is added to dilute the alcohol content and add the amount of natural sugar to the socket. of foam, also falling within the vintage sparkling wines. No dosage is added after disgorgement.

Vinification of the base wine: The grapes are cooled and subjected to a selection of the bunches. This is followed by direct soft pressing of the grapes (whole) and, after the spontaneous decantation of the must, the fermentation begins in steel tanks, and then continues in French oak barrels (of 20% of the grapes) at a controlled temperature in indirectly, with air conditioning of the environment. Fermentation is carried out by indigenous yeasts and with minimal use of sulphites

Draft: Addition of fresh must, always obtained from Grillo grapes of the following year, present in the same vineyard, and following the same method for the vinification of the base wine. The fresh must is added to the wine in proportional quantities such as to dilute the alcohol content and provide the quantity of (natural) sugar necessary for the second fermentation. The must contribution does not exceed 15%, so the wine fully falls into the vintage category

Aging: 50% of the base wine ages for 12 months in steel, while the remaining 50% ages in French oak containers, on its own yeasts

Bottle refinement: after the draft, at least 18 months on its own yeasts

Analytical data of the wine: total SO2: 26 mg/l; Reducing sugars: <1 g/l; Acidity: 6.8 g/l

Alcohol content: 12% vol

Perlage: fine and persistent

Color: bright golden

Nose: mineral and fruity bouquet, with citrus aromas, savory hints and notes of Mediterranean scrub

Palate: full and dynamic, savory and persistent

Pairings: to be combined with shellfish-based appetizers or, throughout the meal, either with traditional Sicilian dishes or with fish tartare, especially Mediterranean red tuna seasoned with black pepper, salt from the Trapani salt pans and fresh thyme
