Obtained from the sparkling process of Grillo grapes, Terzavia is an innovative Sicilian Classic Method: during the tirage phase, the right amount of fresh must of Grillo grapes from the following year is added to dilute the alcohol content and add the amount of natural sugar to the socket. of foam, also falling within the vintage sparkling wines. Vinification of the base wine: The grapes are cooled and subjected to a selection of the bunches. This is followed by a direct soft pressing of the grapes (whole) and, after the spontaneous decantation of the must, the start of fermentation in steel tanks is awaited, to then continue in French oak barrels (20% of the grapes) at a controlled temperature in indirectly, with air conditioning in the environment. The fermentation is carried out by indigenous yeasts and with a minimum use of sulphites
Tirage: (2021) Addition of fresh must, always obtained from Grillo grapes of the following year, present in the same vineyard, and following the same method for the vinification of the base wine. The fresh must is added to the wine in proportional quantities such as to dilute the alcohol content and provide the quantity of sugar (natural) necessary for the second fermentation. The contribution of must does not exceed 15%, so the wine is fully included in the vintage category
Aging: 50% of the base wine ages for 12 months in steel, while the remaining 50% ages in French oak containers, on its lees. After tirage, at least 18 months in bottle always on its lees
