Valdemone Rosato Extra Dry is a sparkling wine produced by Tornatore on the northern side of Etna, in Castiglione di Sicilia. Elaborated according to the Charmat Method, it is refermented in autoclaves where it ages for 6 months in contact with yeasts. Fresh and fragrant sparkling wine to accompany delicious appetizers for aperitifs.

Valdemone Extra Dry Rosé Sparkling Wine - Francesco Tornatore Wines
Valdemone Spumante Rosato by Tornatore is a very pleasant sparkling wine made from pure Nerello Mascalese grapes vinified in rosé. Charmat method with a dry and savory taste, Valdemone Extra Dry is produced by the historic Tornatore winery in Castiglione di Sicilia, in a particularly suitable area on Etna. Its delicate aromas and scents accompanied by a lively freshness and a persistent perlage make it an elegant, harmonious and mineral Sicilian sparkling wine, characteristic of Etna.

Winemaking: once in the cellar, the manually harvested bunches of grapes are pressed whole in a soft pneumatic press
Fermentation: the must ferments at a controlled temperature in steel tanks and then naturally decants cold to preserve the natural aromas of the grapes and obtain a base wine rich in acidity and aromas. The second fermentation takes place with the second fermentation thanks to the inoculation of selected yeasts in autoclave, steel tanks at controlled temperature and pressure, according to the Charmat Method
