Valdemone Brut by Tornatore is a sparkling wine made from native Etna Nerello mascalese grapes vinified in white. Savory and mineral, Valdemone is obtained according to the Charmat Method. Unlike the Classic Method, the Charmat or Martinotti Method involves the second fermentation of the must in an autoclave and the result is a surprisingly fresh and fruity sparkling wine.

Valdemone Spumante Brut Nerello Mascalese vinified in white - Tornatore winery
From fine pure Nerello mascalese grapes grown on the lava soil of the northern side of Etna, Tornatore produces Valdemone Brut. An exceptional Etna sparkling wine from black grapes vinified as white. After the first fermentation, the must ferments in an autoclave according to the Charmat Method and refines in steel for 4 months. The result is an excellent white sparkling wine of exceptional freshness, marked minerality and fragrant aroma, characteristics that only Etna wines possess. Served cold, Valdemone Brut is perfect for fresh aperitifs with a Sicilian soul.

Fermentation: the must ferments at a controlled temperature in steel tanks and then naturally decants cold. The second fermentation takes place with the second fermentation in an autoclave according to the Charmat Method
Aging: in autoclave for 4 months in contact with yeasts

Nose: elegant bouquet with floral and fruity notes of white pulp fruit
