Production Area
The Campofiorito estate is in the Corleone district and is the family’s pride and joy. It lies at altitudes ranging between 600 m and 1200 m above sea level.
Winemaking technique
The grapes are gathered in trays when they are fully ripe. They are destemmed and chilled, then transferred to fermentation vessels with selected yeasts. Here primary fermentation takes place for 8 – 12 days at a temperature of 22°C – 24°C. The wine is then racked to French barriques, where the malolactic fermentation process is completed. At the end of
the barrel ageing process of around eight months, the wine is bottled and left to rest for at least two months.
Characteristics of the wine
This Cabernet Franc has a complex, refined structure. A red-purple colour, it has an intense blackberry aroma and is layered and polished on the palate.
Pairing It enhances the flavour of red meat and roasts, as well as all elaborate and spicy dishes.
