Salted anchovies Vatican from the Mediterranean Sea

Very fresh anchovies caught off the coast of Sicily and processed near the fishing site by the Sicilian company Balistreri, a renowned fish canning company specializing in the preservation of anchovies. The Vaticano salted anchovies by Balistreri have an extraordinary pink color thanks to the immediate processing of the catch. Only carefully selected fish and processed according to the ancient Sicilian tradition by highly qualified personnel for a product of extraordinary quality and a refined and irresistible flavour.

Controlled fishing: Marca Vaticano pickled anchovies are fished in the Western Mediterranean Sea, FAO subarea 37.1.3: Tyrrhenian Sea, with purse seines from April to July

Processing: strictly manual and according to the ancient Sicilian tradition. Freshly caught, the anchovies are immersed in brine. After about 15-20 minutes they are removed from the brine, collected in special baskets and transferred to the work benches to eliminate the entrails and remove the head, the "scapping" phase. At this point the anchovies are selected, rinsed in brine and carefully placed in the containers, alternating a layer of salt and a layer of anchovies. This is followed by weighing, the pressing phase and finally maturation for a year and a half. This technique ensures that the anchovies have an unmistakable and inimitable taste thanks to the right balance between flavor and sweetness

Properties: large threads; pink color of the fillets typical of freshly caught processed fish; fleshy pulp, thicker and tastier due to the greater quantity of fat

Use: Vaticano salted anchovies are very versatile in the kitchen. In Sicily, salted anchovies are one of the main ingredients of Messina focaccia. Excellent to enjoy on a bruschetta of warm, crunchy bread with a drizzle of extra virgin olive oil, to flavor the crepes and above all to prepare the oil and anchovy sauce as a condiment for spaghetti with breadcrumbs
